The hops largely cook out after such a long braise (especially since we reduced the before adding it to the chicken.) And the hops aren&#039;t too aggressive in this beer in the first place.  But Guinness (or another malt heavy beer) would be a good alternative too.  I know William brand comment on another post that he makes brisket with Anchor Porter, added part way through the braising process.</description>

		<description>The chicken looks beautiful but doesn&#039;t the hops bitterness increase as you cook the sauce down? I wonder if a low hops beer; maybe a Guinness stout wouldn&#039;t be more suitable?</description>
