Bacon Candy
What to bring to a traif themed Chanukah dinner? (Besides latkes!) Why Bacon Candy, of course!
Here’s how to make it.
Lay out your high quality bacon on a sheet tray in a single layer, (I covered mine in aluminum foil to make the clean up easier later.) Put it in a 400 degree oven for 5-7 minutes, or until the bacon has cooked about halfway.
Top the bacon with brown sugar and whatever other toppings trike your fancy. I made half of mine with just plain sugar, and half were topped with almonds and a light sprinkling of Mexican cayenne pepper. Other good toppings include most any kind of nut, and other ground spices: ground ginger would be killer. Once topped, back into the oven until the bacon is as crispy as you like it (i like it really crispy) and the sugar has caramelized but not burned. I wouldn’t turn my back on this or leave the kitchen if I were you.
Once done, allow to cool, and move to cool on a surface that won’t stick to the melted sugar. Cut up into more manageable pieces, and serve to impress.

Wow, Mom came through. Arrived in Sacramento after a stormy car ride, bacon candy was ready and waiting. Paired with Hofbrau Dunkel, made for a lovely before-dinner treat. Thanks for the inspiration!

it’s a Hanukkah miracle! Sadly, at my girlfriend’s parent’s kosher household, there was no such gift waiting for me. But there was baklava!

For this sweet, sweet bacon candy I recommend trying Anchor Old Foghorn or Double Grimbergen. These will match the brown sugar and the caramelization of the bacon.
